Sometimes it feels like my quest to find new ways to deliver smoked pork has no limitations. This isn’t one of those times. This is an obvious one.
Pretty much every good BBQ cookbook has some type of recipe for a smoked meat quesadilla. And after experimenting with a couple of different options this weekend, we now have one that we feel confident putting out there.
One thing we noticed on Saturday is that people LOVE when we put together specials that can be ordered as an appetizer and shared by everyone at the table. This is one of those specials.
Our Pulled Pork Quesadilla is six ounces of our house-smoked pork packed between one of the big flour tortillas that we use for our wraps. You will also find shredded cheese, BBQ sauce, and green onions inside. Then we drizzle our house-made crema over top and garnish with fresh parsley.
