Since we started doing Brisket Saturday specials a few months ago, one of my favorite things to do with any leftover brisket on Sunday mornings is to throw it into a breakfast burrito wrap along with way too much hot sauce.
Last week, it occurred to me that it wasn’t fair for me to keep this delicious bite all to myself on Sunday mornings, so we decided that it was time to let everyone else in on the secret a day early.
This simple creation starts with a little bit of oil to grill some green peppers and onions. Then we add in a healthy portion of our house-smoked brisket and some fresh-cut home fries, which are just French fries that we diced up into cubes before frying them. After that, we top the mixture off with some scrambled eggs and a few slices of American cheese and wrap it up.
I highly recommend adding way too much of your favorite hot sauce. For me, it’s all about the Mexican habanero sauce, which I have a stash of in the back if you want to try it.
