Turkey Dinner Tacos

With Thanksgiving right around the corner, I wanted to do something festive for today’s taco special. I have also been looking for a different way to incorporate my Smoked Turkey Breast into a taco. After thinking about a few other ideas, it slowly became obvious that I needed to figure out a way to get an entire turkey dinner into a taco.

My wife is a huge fan of the Gobblerito at Mad Mex. I mean…who isn’t, right? So this special became my take on that brilliant idea.

I started with my Smoked Turkey Breast, which I did over oak chunks with a simple rub of salt, pepper, paprika, and granulated garlic. Then I called in the expert and had Anita make me a creative stuffing. Add some whipped potatoes and turkey gravy and we were pretty much set.

The last twist was a Cranberry Sauce Drizzle that is a simple combination of classic cranberry sauce and aged balsamic vinegar. Cooking the cranberry sauce down didn’t work exactly like I was hoping it would, but with a little help from the blender, I was able to create a sauce that is a unique compliment to the turkey dinner ingredients.
