Watching the first season of Mind of a Chef with David Chang got me completely obsessed with all different types of ramen noodles. And while that is something very far from what we usually do at Bowser’s, I thought this recipe for smoked pork ramen was an interesting way to bridge that gap.

This noodle bowl comes with Chinese egg noodles, our house-smoked pulled pork, collard greens, shitake mushrooms, and a chicken broth that has been infused with bacon and shitake mushrooms and spiked with soy sauce.
