Today’s special is something we tried with our pulled pork earlier this month that was a much bigger hit than we anticipated. The concept is pretty simple: let’s put our delicious smoked chicken, some cheese, and one of our house-made BBQ sauces into a crispy quesadilla. The result is a combination of flavor and texture that is anything but simple.
The traditional way to serve a quesadilla is with a side or sour cream, but I had the idea that we could class that up a bit by using our house-made crema and drizzling it over the four slices. Add some parsley to make it look pretty and this special looks as good as it tastes!
