After not being willing to try guacamole for most of my life, I absolutely fell in love with the stuff when my wife started keeping it in the fridge a few years ago. Since that time, I have had plenty of practice making my own version from scratch and have been thrilled with the constantly improving results.
Today’s taco pairs that delicious guacamole flavor with my house-smoked pulled pork and shredded mozzarella cheese, but that combination alone wasn’t enough. This taco needed another component.
