Classic Smoked Chicken Tacos

Tacos were one of my absolute favorite meals growing up. We almost always made them with hamburger mean, but every once in a while we would get the idea to substitute grilled chicken breasts. Then we topped those bad boys off with shredded cheese, shredded lettuce, salsa, and sour cream.

Back then, just about everything that went into the tacos came straight out of a bag, jar, or some other kind of plastic container. But today, I have the luxury of upping the ingredient quality in my tacos.

For today’s special, I started with my slow smoked chicken thigh meat. Then I topped them off with a mixture of shredded cheddar and mozzarella cheese, shredded lettuce, my house-made salsa, and my house-made crema.

This is a play on the classic taco ingredients, but the smoke flavor of the chicken mixed with the fresh salsa and crema take it to the next level for sure.
