I love nachos. Always have. Always will. And I have always wanted to do some version of nachos here at Bowser’s. The problem is that we don’t have a good way to melt the cheese onto the tortilla chips, and I didn’t want to take the easy way out and use melted cheese. That’s cheating.

But every single time I see an order of our delicious Brisket French Fries leave the kitchen, I can’t help but think how good those flavors would be on an order of nachos.

Then, one day about two week ago, it hit me. I don’t have to melt the cheese. The hot brisket coming off of the grill will do that for me. That’s it. Game on.

Today’s special starts with a basket of tri-colored tortilla chips. Then we are loading them up with our shredded cheese mix, that soon-to-be-famous house-smoked brisket, your choice of our house-made BBQ sauces, green onions, and a house-made salsa.

And if you want to kick up the heat on your order, I have some smoked and sliced jalapenos that are coming in super hot today!
