Brisket Lettuce Wraps

This is going to be a big one. I dare you not to fall in love.

Today’s special is a play on those awesome Cheesecake Factory lettuce wraps that I have to order every time I got there.

My version starts with our house-smoked brisket served in romaine lettuce shells and topped with an Asian coleslaw. Then I prepared three different dipping sauces to complete the experience.

The red sauce is a Sweet Chili Sauce that is the spiciest of the three. It’s based on a foundation of fish sauce and rice wine vinegar, and the flavor comes from chili paste and garlic.

The green sauce is our Cilantro Sauce that is going to be much sweeter than you are expecting. It is a mix of cilantro, vinegar, and honey that gets its texture from crushed cashews.

The gold sauce is a Peanut Sauce that combines sweet and spicy elements with a peanut butter flavor and a thin enough consistency that you can drip it right onto your lettuce wrap.
